Numerous epidemiological studies have demonstrated the association between oxidative stress and non-communicable disease, including cardiovascular disorders, mental disease, and several types of cancer. Oxidative stress is commonly known as an imbalance in the production of reactive oxygen species (ROS) and the biological antioxidant defense system. Exogenous antioxidants have gained great attention because of their beneficial role in preventing chronic disease. A balanced diet contains hundreds of naturally occurring antioxidant compounds, including polyphenols and vitamins. Antioxidants are commonly found in vegetables, fruits, cocoa, grain cereals, olive oil, nuts and beverages, such as coffee and tea. This book presents original research and reviews of literature concerning dietary antioxidants and human health.

Research has shown that the use of certain functional foods and nutraceuticals, including spices, herbs, and millets, animal foods and plant foods can play a role in the treatment and prevention of various diseases and in health promotion. Finally, the book explores epigenetic modulation as a new method for the development of functional foods and functional farming. Intended for nutritionists, food scientists and those working in related health science professions, this book contributes to the discussions focused on nutritional transition, globalization, how to administer foods in the treatment of metabolic syndrome, hypertension, diabetes, heart attacks, neuropsychiatric disorders, bone and joint diseases, and carcinogenesis. Places emphasis on food diversity to provide perfect combinations of nutritional ingredients Presents the utility and necessity of functional food production for health promotion Offers suggestions to increase functional food production while simultaneously decreasing production costs

Non-communicable diseases (NCDs) are chronic diseases that include most ageing-related diseases, representing the main cause of death and disability in the general population. Inflammation and oxidative stress are common features in NCDs, responsible for the cell, tissue, and organ damage that contributes to the progression of these diseases. They may be also key targets for the development of novel preventive and therapeutic strategies. This Special Issue includes 14 peer-reviewed papers, including 12 original research papers and 2 reviews. Together, they represent the most recent progress in the field of several degenerative disorders, aiming to establish specific biomarkers, detailing the pathogenesis and the evolution of these diseases, making a correct diagnosis, and opening up new therapeutic strategies. Of relevance, many studies report the beneficial effects of natural compounds, derived from several plants, leaves, and fruits; their antioxidant and anti-inflammatory properties suggest their use as a dietary supplement for prevention and/or complement to standard therapies. Special thanks to all authors and reviewers for their valuable contributions and constructive suggestions and to the publishing team of Antioxidants for their help in compiling this Special Issue.

Antioxidants are substances that can prevent or slow damage to living cells caused by free radicals, which are unstable molecules the body produces as a reaction to environmental and other pressures. Sometimes called “free-radical scavengers,” free radicals can cause mutation in different biological compounds such as protein, nucleic acids, and lipids, which lead to various diseases (cancer, cardiovascular disease, aging, etc.). Healthy foods are considered a main source of antioxidant compounds and from the beginning of a person’s life, a strong relationship is seen between antioxidant compounds and the prevention of certain diseases, such as types of inflammations, cardiovascular diseases, and different kinds of cancers. It is thus of great importance that new data relating to antioxidants and their biological activity be collected and that antioxidant modes of action be illustrated.Experts from around the world contributed to the current book, discussing antioxidant sources, modes of action, and their relation to human diseases. Twenty-five chapters are presented in two sections: Antioxidants: Sources and Modes of Action and Antioxidants Compounds and Diseases.

Nuts and dried fruits are part of our daily diet. They are consumed whole or as ingredients of many food products such as muffins, cereals, chocolates, energy bars, breads, and cookies, among others. Health Benefits of Nuts and Dried Fruits provides a comprehensive overview of the literature on the health benefits of nuts and dried fruits. The book summarizes the current state of knowledge in key research areas and provides ideas for future scientific research and product development. Nuts, a term that comprises tree nuts and peanuts, are highly nutritious, containing health-promoting macronutrients, micronutrients, vitamins, and bioactive phytochemicals; they are one of the edible foods with the highest content in antioxidants. The consumption of nuts is recognized for its health-promoting properties, which ranges from a consistent cholesterol-lowering effect in clinical trials to a robust association with reduced risk of cardiovascular disease and all-cause mortality in prospective studies. In spite of the high energy content of nuts, there is no evidence that their frequent consumption promotes obesity, and they may even help control it. Dried fruits, which serve as important healthful snacks worldwide, are nutritionally equivalent to fresh fruits while providing all of their bioactive components in concentrated form. While the evidence level concerning the health effects of dried fruits lags behind that on nuts, it suggests that individuals who consume dried fruits regularly have a lower risk of cardiovascular disease, obesity, and other non-communicable diseases. Main features of the book concerning nuts and dried fruits: • Provides detailed information on health effects • Highlights current regulation and health claims • Provides updated dietary recommendations • Describes nutrient absorption and metabolism • Discusses mechanisms implicated in the health effects Although this book is intended primarily as a reference, by comprehensively reviewing the current state of knowledge it can guide future research on the topic. Among others, food scientists, biochemists, nutritionists, health professionals, decision makers, and regulatory agencies can draw much benefit from its contents. Hopefully, it will help in public health strategies to promote healthy aging and improve population wellbeing.
